Healthy Banana Bread

I love banana bread!!!!

This healthy recipe means you don’t have to feel guilty when you’re enjoying this yummy bread for breakfast or as a snack. It’s gluten free, dairy free and packed full of yummy flavour :-)

Recipe:

4 large ripe bananas (mashed) – are a good source of B group vitamins to help boost energy levels. They’re also full of natural carbohydrates to fuel your cells.

2 free range eggs – I prefer the taste and flavour of free range eggs and I also like knowing the chickens live a free life. Eggs are a good source of protein.

1 teaspoon of natural vanilla extract – this can help soothe digestion.

1/2 cup of organic coconut oil – you can use whatever oil you like but I love coconut oil because it handles the heat and it also helps speed up your metabolic rate aiding weight loss…..yippee!!!

2 cups of brown rice flour – again feel free to use a different type of flour such as spelt flour. Brown rice flour is gluten free which I love because wheat flour doesn’t really agree with me.

3 tablespoons of natural organic honey – the best honey can normally be found at your local farmers market. Honey is naturally anti-bacterial and it’s also a natural sweetener.

1/2 cup of chopped walnuts – again feel free to go nuts with whatever nuts you want.

1 teaspoon of cinnamon powder – can help regulate blood sugar levels so you don’t feel the urge to eat the whole banana bread at once…..yeah right :-)

1 teaspoon of baking powder

Oliver patiently waiting for me to drop some banana bread mixture on the floor………..or the whole bowl :-)

First mash the bananas then beat in the two eggs and vanilla extract. Then add in all the other ingredients and mix everything together.

Place the mixture into a bread tin (or a cake tin) and cook on medium heat (approx: 170 degrees) for about 45mins. Keep an eye on your bread so it doesn’t burn.

I like to put natural crunchy peanut butter on my banana bread………….yummo!!!!!!
