Apple Pie Chia Pudding :)

This delicious and nutritious pudding is really easy to make. You will only need a handful of natural ingredients.

Ingredients: 

1/2 cup of chia seeds – are one of nature’s super foods. They’re gluten free, a great source of amino acids, omega 3, iron and calcium. The Mayans & Aztecs used chia seeds to get a natural energy boost.

1 & 1/4 cups of rice milk – I prefer to use rice, almond or oat milk over dairy milk because it doesn’t have lactose (milk sugar). As we get older our bodies produce less and less lactase, the enzyme which breaks down lactose. Lactose can cause irritation to the body for some people. Rice milk is lactose free, gluten free and it also contains calcium for the bones.

1 cooked apple with cinnamon – apples are packed with antioxidants vitamin A & C. They also contain pectin which can help assist with lowering cholesterol levels. Apples are also a good source of soluble fibre which supports healthy bowels. Cinnamon can help stabilise blood sugar levels and sugar cravings.

1 teaspoon of honey or stevia – I prefer to use natural sweeteners over artificial or processed. Stevia comes from a plant and is lower in calories than sugar and it has a low impact of blood sugar levels.

1/2 teaspoon of vanilla extract – this helps to flavour your pudding so it tastes AMAZING!!!

Slowly cook the chopped apple on the stove until golden brown. Add in some cinnamon powder and stir through. Then combine the apple with the rest of the ingredients into a mixing bowl and whisk everything together for about 5 minutes. Place into a container and let it set in the fridge for about 2 hours. The chia seeds will expand and absorb the rice milk and other ingredients. This serves approx: 2 people.
